My favorite would have to be without a doubt Nobuo Uematsu, Koji Kondo, Yoko Shimomura, Yasunori Mitsuda, David Wise, John Williams, Hans Zimmer, and the Avatar/LOK Track Team.

Pretty much everyone you mentioned, but I'd also include John Powell (How To Train Your Dragon), Brad Breeck (Gravity Falls) Howard Shore, (Lord of the Rings) Nicholas Hooper (Harry Potter), Every composer that's worked on the Legend of Zelda games, Danny Elfman. And there's a ton of anime series I know of that have awesome soundtracks but I have no idea who the composers are.
